The Perfect Cookie. Every Time.

I have had a few people email me asking for a simple cookie recipe. You know like a go-to recipe with no bells or whistles. Just your normal cookie that tastes amazing, but doesn't leave you covered in flour and shame because they ended up like charcoal instead of cookies.

So I threw together some simple tips and tricks that will help you achieve The Perfect Cookie. Every Time.

Hope this comes in handy during the impending holiday season!

What You Need

`2 cups flour

`2 sticks of unsalted butter (at room temp)

`2 eggs (at room temp)

`1 cup brown sugar

`3/4 cup regular white sugar

`1 tsp salt

`1 tsp baking powder

`1 tsp vanilla

`1 1/2 cups butterscotch chips (or any chips you like)

Directions

`Pull out your butter and eggs. Let them come to room temperature. This takes almost 2 hours or so.

`Once the butter is super soft. Cream the butter and sugar until smooth.

`Mix in the vanilla and eggs until incorporated.

`In a separate bowl sift the flour, salt and baking powder together.

`Now slowly mix in the dry ingredients with the wet. Continue mixing until you get a stiff dough.

`Now with a rubber spatula fold in the butterscotch chips. Fold in well so each cookie has an even amount of chips.

`On a baking sheet lined with parchment paper scoop your cookies. (About 1 tbs of dough for each)

`Bake the cookies at 325 degrees for about 10-12 minutes. Keep an eye on them, as each oven is different. Once they form a light golden color around the edges, take the cookies out and let them finish cooking on the baking sheet. The sugars in the dough with finish the cooking process and leave you with a yummy soft center.

Tips & Tricks

`You must start with room temperature ingredients. This will ensure a smooth textured cookie.

`Pre-heat your oven.

`Don't grease your baking sheet. Use parchment paper or a Silpat so your cookies won't stick.

`Each cookie dough scoop should be no more than 1 tbs.

`Mix your dry ingredients separate and slowly add into the wet ingredients. This way your cookie dough will be well incorporated, with no dry pockets.

`Don't over mix.

`Fold your chips into the dough using a spatula. So you avoid breaking the chips and over mixing.

`Let your hot cookies cool on the baking sheet so the sugars finish the cooking process.

`Package cookies in cellophane bags with ribbon and share with friends!
