Roasted Banana Caramel Muffins


What you need

`2 cups flour

`1 cup dark brown sugar

`2 large eggs

`3 bananas (roasted)

`1/2 cup unsalted butter (melted)

`2 tsp baking soda

`1 tsp vanilla

`big pinch of salt

`melted caramel

What you do

`Pre-heat oven to 400'. Place bananas on a foil lined baking sheet. Roast bananas till they turn black (about ten min)

I love roasted fruits and veggies. I feel like the roasting brings out the sweet flavors and adds a nice taste and texture through out. So, although roasted bananas are highly un-attractive....they taste amazing!

`Once bananas are done and cooled completely....mix all the ingredients together.

`Turn the oven to 325'

`Scoop the muffins using an ice cream scoop or measuring cup for equal sized muffins

`Sprinkle a good amount of brown sugar on top each muffin

`Bake for aprox. 15 minutes

`Let cool completely then drizzle melted caramel over the top....and enjoy!
