Crispy Baked Chicken
What You Need
3-4 Thinly Sliced Chicken Breast
2 cups flour
2 cups plain bread crumbs
Pinch of salt & 1 tsp of pepper
1 tsp garlic, 1 tsp Italian seasoning, 1 tsp onion powder
What You Do
-First pre-heat your oven to 350 degrees and prep your baking pan. Line a baking sheet with foil and place a cooling rack on top. This way when your chicken is in the oven it will bake evening and get crisp all around.
-Next set up your dredging or chicken coating station. You’ll need three plates or shallow bowls. Fill one with flour, salt, and pepper. Fill one with the eggs and be sure to whisk the eggs. Fill the last bowl with the breadcrumbs, and seasonings.
-Using one hand in efforts of keep the other clean, coat each chicken breast. Begin by coating evening in the flour. Then coat it evening in the whisked eggs. Lastly coat it evening with the bread crumbs and then place on your baking pan. Continue until all your chicken breasts are evening coated.
-If you are running low on your coatings, then take a minute to refresh them by adding more. If you are cooking more than 4 chicken breasts try doubling the ingredient amount at the start!
-Bake the chicken at 350 for about 15-20 minutes or until golden and cooked through.
-Slice the chicken and serve on a bed of spinach or your favorite salad. I like to drizzle with a little bit of balsamic vinaigrette!
