Coconut Lime Margarita

“You put the lime in the coconut…” is that how the song goes? This cocktail was made for the warm Summer months that are quickly approaching! So first, bookmark/save this post so you can refer back to it when it comes time for Summer cocktails! If coconut or margaritas aren’t you thing, then try sending this to someone you know who you think would enjoy it!

I’m also going to say it, this would be tasty as a fun mocktail! The coconut and lime together with sparkling water would be so refreshing and tasty. Take a quick look at how I put this cocktail together …

If you have been keeping up with all the cocktails I’ve share here, then you know I love a fun rim! One of my favorite was to rim a glass is with honey or agave! This helps things stick to the glass rim and also offers a bit of sweetness. I used shredded coconut to rim this cocktail which was such a fun addition! The next time I make this cocktail though I’ll use more finely shredded coconut ;)

What makes a margarita a margarita? Well a handful of things but these two are at the top of my list. Tequila and Cointreau! What is your favorite margarita add in?

Next up I like to add a bit of sweetness with some agave but you can fully skip that part! The juice of one whole lime makes it so refreshing and tart. A little bit of coconut syrup is KEY! Give that a strong stir…

Then top it all off with cold sparkling water. My favorite will forever be Topo Chico!

Garnish with a thinly slice lime and ENJOY!

Step 1: On a small plate put 2 tbs of honey or agave. Dip your glass rim in it. On another small plate add the shredded coconut and dip your honey/agave coated rim into the coconut.

Step 2: Fill your rimmed glass with ice.

Step 3: Add in the tequila, Cointreau, juice of whole lime, cream of coconut and a bit of honey/agave. Note: Slice a thin lime wheel or wedge for a garnish BEFORE you juice the lime. Also, you can vary the amount of agave/honey you add if you don’t want the drink too sweet.

Step 4: Give all that a solid stir, then top with your favorite sparkling water and lime garnish. Enjoy!
