A Brunch Board + Trying To Keep Our Spirits High

 

The holidays this year are looking wildly different aren’t they? At least for most of us, we don’t get to spend time with our entire family at once. Going out and doing things in public are either cancelled or have restrictions. Our family knows it is for the greater good, though overall we feel sad. Truly bummed and terrified about the current situation with the pandemic. Both Dan and I come from large families who do most everything together. We literally find any excuse to celebrate and come together. Which makes not being able to see each other a ton harder. You get it. We all understand. We all are literally going through the same thing. We may deal with it differently, but we can all agree that what is happening right now just plain sucks.

Since March I feel like I’ve been up for the challenge. I’ve come up with ways to keep things interesting while staying home. Keeping the girls entertained and recipe tasting like a crazed chef. I’ve shared it all here on my website + social media over the past year with you all and I’m hoping we have been able to shed some light in your own homes. Hopefully together we can make each other smile despite the despair we feel deep down.

So, while we are desperately trying to keep our spirits high let us eat brunch! One way we like to jazz up normal breakfast or brunch is by combining all our favorites on to a large cutting board. Then letting the family graze until their hearts + tummies are content. You know snack boards are so trendy and for good reason! They are so fun to put together and end up getting devoured in my house. Keep in mind snack boards can combine any type of food. Here we are doing breakfast. You could do dinner, dessert. Of course there is always the OG cheese and crackers. Back in October I did a movie concessions style with candy + popcorn. Look, most of us are stuck at home. Let’s get creative and go nuts!

For our Brunch Board I added crisp bacon, fresh berries, mini pancakes, our favorite fig bars, Churro Waffles (recipe for these coming soon), and hard boiled eggs which are mostly for me and the baby. The redheads don’t like hard boiled eggs. While the bacon and eggs cook, I make the batter for the waffles. I put the board together while the last few waffles cook and set it our with syrup and softened butter. We put the board out and we enjoy it while playing a game, puzzle, or watching a show together.
