Coconut Cloud Smoothie - Erewhon Copy Cat

 

This smoothie is a MUST try! It is a great mix of pineapple and creamy coconut. It also has avocado and collagen which is great for your skin. This smoothie is packed with super foods and tastes delicious. Not to mention, it looks insanely beautiful too! Making this at home and using a clear glass is worth it. This smoothie gets its unique blue color from Blue Majik which is a blue-green algae superfood powder. You can find it HERE!

I first saw this smoothie all over TikTok as people ran to Erewhon to buy it. Erewhon is a grocery store here in Los Angeles. Inside the grocery store they make all kinds of yummy smoothies and this Coconut Cloud Smoothie was their flavor of the month back in March. It was a collab smoothie with the one and only Marianna Hewitt, co-founder of the skin care brand Summer Fridays. Which is probably why this smoothie has some great ingredients for the skin blended up in it.

Since we don’t all have an Erewhon near us, I decided to recreate this Coconut Cloud Smoothie at home. I actually don’t live near an Erewhon either and wanted to try this smoothie so bad, mostly because it looked so dang pretty! I think I did a fairly great job at recreating it! Even Marianna Hewitt commented on my TikTok post saying I did a great job!

Coconut Cloud Smoothie


 
 

Ingredients

1/2 cup cold coconut cream

1/2 cup vanilla almond milk

1/2 frozen banana

1/2 frozen avocado

1/3 frozen pineapple

1 tbs almond butter

1 scoop collagen powder

1 tsp + tiny pinch blue majik powder

1/4 tsp vanilla extract

Directions

Step 1: Start by whipping a 1/2 cup of COLD coconut cream until it gets nice and thick. You can do this with a hand held frother, whisk it by hand or use an electric mixer. You’ll need the coconut cream to be cold, so chill it in the refrigerator for a few hours before whipping it. Once you’ve whipped up the cold coconut cream, store in the refrigerator until it is time to use it.

Step 2: Start the smoothie by pouring almond milk into the blender. Pour in enough to just cover the blender blades. You’ll add about 1/2 cup or so. Remember, to keep your smoothie texture nice and thick you don’t need a ton of liquid. You can also add more almond milk if it ends up being too thick to blend smooth. I always like to start off with less and add more milk if I need to. I love a thick smoothie.

Step 3: Next toss in the frozen banana, avocado and pineapple. Another tip, it is best to use frozen fruits here. Using frozen fruits will also help your smoothie texture be nice and thick.

Step 4: Now add in the almond butter, collagen, vanilla extract, blue majik powder and 2 tbs of the whipped coconut cream. Blend all this until smooth! Again if you find that you need more milk to get it to blend up smooth, just add a bit more.

Step 5: In a clear glass add in the rest of your cold whipped coconut cream and a pinch of the blue majik powder. Give that a little swirl and then pour in your smoothie! It should look similar to a blue sky swirled with clouds. That is why using a clear glass is a must! ;)
