These little cookies pack a nice punch and the coffee fully brings the chocolate flavor to the next level! They are a must try and very simple to bake! Seriously, you can just make the dough and then bake them! No chill time required.

Cold Brew Cookies


 
 

Ingredients

5 tablespoons unsalted butter

1 egg

3/4 cup sugar

1 teaspoon vanilla

4 teaspoons instant coffee

2 teaspoons water

2 cups flour

1 teaspoon baking soda

1 cup chopped chocolate or chocolate chips

sea salt for sprinkling each cookie

Makes 12 Cookies


 
 

Directions

Step 1: In your mixer add the butter, sugar, egg and vanilla. Mix until smooth.

Step 2: In a small bowl mix together the instant coffee and water until it comes together.

Step 3: Add the coffee mixture to the butter, sugar mixture and mix until everything is combined.

Step 4: Slowly add the flour to the mixture just until a dough forms. Note, the dough will be more on the sandy side. That is OK!

Step 5: Add chocolate to mixture and mix just until the chocolate is throughout the dough.

Step 6: Use a 2oz cookie scoop and firmly press the scoop into the dough. Scoop 12, 2oz cookie dough balls and place them on a baking sheet lined with a silicone baking mat or parchment paper.

Step 7: Sprinkle each cookie with sea salt and then bake at 350 degrees for 15 minutes. Let the cookies cool then enjoy!
