Simple Cheerios Bites - A Quick After School Snack

 

With back to school season breathing down my back, I’m trying to figure out what to have on hand that will make my life a bit easier. Last year Mila started Kindergarten and it was my first experience with a real deal school season. It threw me for a loop and I’m pretty sure I was craving Summer break more than Mila come the end of the year. This year though I know what to expect. I am positive our mornings will still be chaotic. But one thing that truly helps are fast morning meals + snacks we can all eat on the go as we fly out the front door.

These Cheerios bites only take four ingredients, come together extremely fast and I can make a bunch to last a few days. My girls love them! Bonus, they also satisfy my late night sweet tooth cravings. Check them out and happy Back To School planning!

For these you can use any nut or seed butter you enjoy! I make these with peanut butter or sunflower seed butter. Both work great! If you can’t have honey then I’d try maple syrup or agave syrup. Once you’ve mixed all the ingredients together and have scooped them out, you do have to let them firm up in the fridge. You also have to store them in the fridge. If you keep them room temperature they just fall apart. So keep that in mind when you go to make these!

After I scoop all the Cheerios bites out I love to sprinkle them with sea salt. The sea salt helps bring out the flavors and balances out the sweetness! It’s the perfect touch!


Cheerios Bites


 
 

Ingredients

1/2 cup smooth peanut butter or any nut/seed butter you’d like

1/2 cup honey

3 cups Cheerios (plain or honey nut work best)

1 tsp sea salt

parchment paper or silicone baking mat

Makes About 12-14 Large Bites Using A 2oz Scoop


 
 

Directions

Step 1: In a large pot over low heat melt together the peanut butter and honey until they are one.

Step 2: Next add in one cup of Cheerios at a time stirring in between to ensure all the cereal gets coated.

Step 3: Line a small cutting board, baking sheet or large plate with parchment paper or a silicone baking mat.

Step 4: Scoop out the Cheerios mixture and gently place them on the parchment paper. If Cheerios fall to the side just stack them on top so you end up make large bites or balls rather. See photos for reference.

Step 5: Once all your Cheerios are scooped out, sprinkle each one with a little bit of sea salt. Place them in the refrigerator until they are completely firm.

Step 6: Once the bites are fully firm they are good to enjoy. Store them in an air tight container or zip top bag in the refrigerator for up to 2 weeks.
